Mushroom Soup from Le Macinaie Restaurant
one of the great dishes of Amiata cuisine
In the recipe book of Romano, the legendary chef of the Le Macinaie hotel, we read:
The ingredients
- Extra virgin olive oil,
- mushrooms of Mount Amiata,
- chili pepper,
- “scerpollo” Aromatic plant characteristic of Monte Amiata that resembles oregano.

Method
Base with extra virgin olive oil, garlic, chili pepper, scerpollo, parsley and just enough salt.
Brown everything and add a touch of tomato.
Add mushrooms, all the varieties that the season offers. Each of them in fact brings an extra flavor that gives harmony to everything. Brown them well after having adjusted them with salt and pepper.
Add water to finish cooking.
Separately prepare croutons of Tuscan bread, toasted, and rubbed with garlic.
Place the bread on a plate and “half” it with the mushrooms.
Finish with a sprinkling of chopped parsley.
I forgot, “Love” must be carefully dosed throughout the preparation phase, otherwise we cannot achieve Romano’s excellent results.

History
Once upon a time, our elders weren't particularly crazy about mushrooms.
It is in fact a trend that was born in the 50s, when the first tourists began to discover our land.
Of course, today it is a highly sought-after dish and the proliferation of mushroom lovers from an enogastronomic point of view goes hand in hand with that of mushroom hunters.
It is not uncommon in September to see the mountain invaded by myriads of enthusiasts who “pierce” everything in search of the coveted prize.
Look for them, find them, try to cook them, but then reward yourself by coming to eat Romano's soup.
CONGRESS OF PORCINI MUSHROOMS
Did you hear much commotion in the woods last night?
Did you see myriads of lights in a circle?
The porcini mushrooms were at the congress: the debate was deep and controversial, but ultimately unanimity was achieved.
Let's escape from this land, they all shouted; let's not let them look at us anymore, because even if we are fake, they want to eat us.
But first, near the beech tree, let's place a plaque on which is written:
