Our kitchen offers traditional dishes of the Mount Amiata, linked to peasant culture and local products.

It's a simple cuisine, born in a time when people used what the land and forest had to offer. We still follow this approach today, preparing dishes that respect traditional recipes and original flavors.

🍲 Traditional soups

Among the most representative dishes of Amiata cuisine are soups, prepared according to recipes handed down over time.

These dishes are based on seasonality and the availability of ingredients, often based on vegetables, legumes, and forest products.

In particular, the Amiata mushroom soup It is one of the most characteristic dishes of the area, made with simple but flavorful ingredients.

It's a recipe that perfectly captures the local cuisine: simple, hearty, and deeply rooted in the mountains.

🍝 Homemade pasta

The pasta is prepared by hand every day, as per tradition.

Among our proposals:
tortelli, pici, pappardelle, tagliatelle, lasagne, paglia e fieno and ancient maccheroni.

Each shape is paired with typical Tuscan condiments, prepared with simple, seasonal ingredients.

From meat sauces to more local dishes, homemade pasta remains a central element of our cuisine.

Second courses are mainly based on white meats, but also include pork and beef preparations.

The recipes follow local tradition, with simple preparation methods that focus on the quality of the raw materials.

We offer both grilled dishes and slower-cooked dishes, such as roasts and stews, typical of mountain cuisine.

Depending on the season, there is no shortage of dishes linked to the territory and the forest, with strong but balanced flavors.

Alongside our more classic desserts, we also offer some special seasonal creations, made in-house.

The wine selection includes labels from the wine-growing areas surrounding Monte Amiata.

These are mainly local and Tuscan companies, chosen to best represent the region and its characteristics.

The wines are selected to accompany traditional cuisine, with options suitable for both soups and first courses, as well as meat dishes.

The menu includes various types, to offer a balanced choice that can easily be paired with the different courses.

The kitchen is run by Giorgio, who continues the work begun by his uncle Romano, aunt Vittoria, and mother Carla.
